Is Cast iron safe to cook with?

Do you have anything to support your answers with? (Proof). I know that is what people cooked on in the old days and I just want to know from everyone who does cook out there about these. Thank you for your kind answers.

Do the handles and lids of stainless steel cookware get too hot to touch when on the stove?

I’m looking into buying new cookware, and I’m stuck between a stainless steel set and an anodized aluminum set. The stainless steel set does not have any kind of protection on the handles of the pans/pots or the lids (the aluminum set has silicon-rubber covered handles). I can’t help but think they would get too hot to touch when the pan is on the stove. Does anyone know? I don’t want to scald my hand when I take my pan off the stove.
Geez, that’s really inconvenient that you have to use a pot holder… The set I’m looking at is cooks. Here’s a link. It’s on sale :)

Good cookware?

What cookware should I have in my kitchen?

The other one I am looking at is also Kitchen Aid. 18/10 stainless steel, heavy-gauge encapsulated bases, oven safe to 400F and the set includes: 1,2,3 qt saucepans, 6 qt stockpot, 10″ saucepan, 2 qt steamer insert. Saucepans and stockpot have lids.

Both have great reviews. So how do I choose? If price means anything, the first one is reg. $600 and the second is reg. $379

Decor wise, who has your favorite kitchen on the Food Network? I like Ina’s the best. I like the clean classic look of the white and stainless steel with the green accents. I have the same dried peas in glass canisters :-) I also like Rachael Ray’s 30 Minute Meals kitchen set. I also love orange. My dining room is orange :-) Plus, I like the colorful retro/modern look. How to remove the coating on copper bottom pots and pans?

My bridal party bought me a beautiful set of pots and pans which they presented to me in a gift basket. However, the gift basket did not include any of the paperwork included in the box of cookware. So… I have a couple questions.

1. My fiancée used one of the pots before we realized you need to remove a coating on the copper. Now there are some ugly rainbow-type spots on the steel part of the pans. Can this be removed?

2. After realizing his mistake and reading the warning sticker on the other pieces, I discovered that they need to soak in baking soda and warm water for 20 minutes. My question is: Is it just the copper that needs to soak or the whole pot?

Also, any other helpful advice would be greatly appreciated!
